Los sistemas agroalimentarios en todo el mundo conllevan costos ocultos significativos para la salud, el medioambiente y la sociedad, con un impacto estimado en más de 10 billones de dólares anuales, lo que equivale al 10% del Producto Interno Bruto (PIB) mundial, según un informe anual de la Organización de las Naciones Unidas para la Alimentación y la Agricultura (FAO). Este informe, por primera vez, cuantifica estos costos en 154 países con el propósito de comprender los “costos reales” de los alimentos. Aproximadamente el 73% de estos costos ocultos se relacionan con dietas poco saludables, especialmente en países de ingresos altos y medianos. Además, alrededor del 22% de los costos están vinculados al impacto ambiental, incluyendo emisiones de gases de efecto invernadero y cambios en el uso de la tierra. Los países de bajos ingresos se ven afectados por problemas relacionados con la pobreza y la subalimentación, que representan un 5% de los costos ocultos. La FAO reconoce deficiencias en los datos recopilados y planea abordar estos problemas en futuros informes.
La FAO sugiere que la mitigación de estos costos podría involucrar la imposición de impuestos o regulaciones a los agricultores para promover prácticas más sostenibles y brindar asesoramiento para limitar estos costos. Además, señala que las mejoras en la salud pública pueden conducir a un aumento de la productividad y, en última instancia, a mayores ingresos para los hogares. La FAO planea realizar evaluaciones más detalladas en su informe anual de 2024 para determinar la mejor manera de abordar estos costos ocultos.
